We treasure customer requests for new entrees. For every exotic tandoori chicken we offer on the menu, there come requests for the most basic lunches: grilled cheese sandwiches or plain noodles. Our chefs can create these lunches flawlessly. But just like your thermos packed from home, once a dish leaves our kitchens, keeping things hot and fresh en route to the lunch table is not always easy. Some dishes stay tastier longer than others, which should be consumed, “ala minute.”

Plain buttered noodles is one of those dishes that can be simple perfection right off the stove, but let it sit, even for a few minutes, and the perfection doesn’t last. At least until now. Through months and months of endless testing and tasting and tweaking, we are thrilled to pilot a brand new dish for June: plain buttered noodles. We take wide egg noodles, and toss it in just melted clarified butter. Add a pinch of salt and mix well. In fact, it turns out one of the keys to a successful plain buttered noodle is the mixing, even just before eating. We have designed a nifty “shake me” sticker so the kids will shake just before eating so that the noodles are properly bathed in the butter. The other key to this dish is using premium butter. We are talking liquid gold that has been clarified, removing all of the milk solids. When you take this extra step of boiling off the milk solids and almost browning the butter, you remove any possibility of coagulation or cloudiness which can ruin perfectly plain pasta. The clarified butter is like an elixir. One of our chefs who recently lost over 20 pounds leaves the kitchen when this delicious butter is tossed with the fresh noodles. He is like Odysseus demanding his staff chain him to the boat’s mast, otherwise, his weight loss would be quickly drowned in lip-smacking butter. The smell of this melted, clarified butter is like nectar of the gods, all of our cooks scoop bowls and set them aside for their own lunches. On June 11th, see what all of our months and months of testing have resulted in. Sometimes it is the simplest dishes that are the true feats. Simple really can be the best and on June 11th, we’ll prove it to you by putting our best dish to the test.
