Early Adopters

This summer we have tried something new. Usually we start the school year with new entrees that we test and test ‘in house’ and in smaller field tests (smaller to us is a batch of 100!) but we don’t actually make thousands of a dish all on one morning until it is actually on the menu, ready for you to order. This isn’t perfect. For one thing, anyone who watches Food Network knows that you can’t just ‘scale’ a recipe exactly for huge batches. In other words, if you need to make a thousand cookies, you can’t just multiple your recipe for 10 cookies by 100. With those kinds of quantities, the science of cooking takes over and any slight variation (like temperature, or exact weights) gets magnified.


For the first time this summer we had enough kids in camps and summer programs to really be able to scale our recipes, and see the results in large numbers. What a wonderful opportunity! We are spending all summer perfecting our brand new items for the fall: plain buttered noodles, a new ham and cheese roll up, lots of wholesome salads and more meat free options, too!

Thank you to all of you “early adopters.” You know who you are. You are the eaters of the world who relish from-scratch cooking, and aren’t afraid to try something different. You have imagination, and are willing to take risks. You are like Steve Jobs, imagining the possible and helping to make it happen. So, thank you!
