Can you believe that we are halfway through the school year? What a great time to reevaluate and revamp  what we are feeding our kids for lunch.  Finding options that are convenient, nutritious and delicious can be a difficult task and the menus in many school lunch programs are high in saturated fat and cholesterol and too low in fiber and nutrient-rich fruits, vegetables and whole grains.
